Allentown Caterer Creates Appetizing and Well Received Specialty Menu

Below are some lovely examples of plates from a recent June wedding. Look amazing? Delicious? Of course! Want to know a little secret? They are all vegan – 100%. Surprised? You shouldn’t be. Too often the term vegan conjures disparaging thoughts, especially to a more “carnivorous” crowd. Vegan cuisine can be just as tasty, if not more so in some cases, as more “traditional” fare. One hundred fifty-two delighted, well fed guests recently smiled their approval to the world of vegan cuisine, some even claiming to henceforth “be vegan” themselves. Chickpea, Smoked Tofu, Bulgur Wheat, and Chimichurri comprise the first main course, seared to perfection, and served over lemon infused Israeli cous-cous with baby spinach, sweet mango chutney, Szechuan peppercorn sauce, and a spicy sriracha aioli. The second option of main course for the evening was a delightful penne rigate tossed with custom made vegan pesto, plenty of crisp, delicious vegetables, grilled peppers, and finally topped with a smattering of roasted pine nuts and shavings of fresh cashew nut cheese. Yum! Cocktail Hour was equally tasty, equally vegan, and equally loved. Specialty menus, vegan or otherwise, don’t have to mean “less”, but instead, something more! Well designed, well executed food is delicious just because it is. 152 guests on a perfect June afternoon got to share the palate of two people so in love.
